Pre-heat the oven to 180°C.
Prepare the vanilla cake mix as instructed.
Lightly spray two muffin trays (18 holes should be enough) and line with cupcake cups.
Ladle the cake mixture into the cupcake cups (only fill them halfway otherwise they will overflow).
Layer the strawberries into the cake mix.
Bake for 15-20 minutes or until a wooden skewer comes out clean.
Allow to cool completely before icing.
Pipe the strawberry icing around the outside of the top of the cupcake to form a ‘nest’.
Pipe green icing into the center of the ‘nest’ so it looks like grass.
Place speckled eggs on top of the green icing.
